I know what you’re thinking… CHICK PEAS???
These chickpea cookies are loaded with folic acid, fiber, iron, zinc, copper, manganese and protein.
You will be shocked, that these cookies contain chickpeas, no flour, no butter, and no refined sugar. Plus they are gluten, vegan & grain free!
These cookies are so chocolatey and chewy you’ll NEVER know they were made with chickpeas.
They are the perfect healthy treat for when you’re craving something gooey, soft, and cookie dough like.
Becky brought a batch of these to a Saturday class they were delicious!
1can chick peas (garbanzo beans) drained, washed, patted dry
2 tsp vanilla extract
9 TBL. Powdered peanut butter mixed with 4-5 TBL water
1/4 C honey
1 tsp baking powder
Pinch sea salt
1 rounded TBL cacao powder
1/2 C vegan chocolate chips
Mix everything in a food processor till very smooth. Transfer to a bowl, add chocolate chips mix.
On a sheet pan with a Silpat drop approximately 1TBL of dough about one inch apart (yields 24 cookies)
Bake on convection 350 degrees for 10 min. Cool and enjoy!
