Pumpkin Protein Pancakes!

Happy Autumn!

 

Did you know that pumpkin is chock full of vitamins, minerals, fiber, and antioxidants?

Not only is pumpkin loaded with vitamin A and antioxidant carotenoids, particularly alpha and beta-carotenes, it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, and iron.

I love protein pancakes because they are quick, delicious & contain all the components for a balanced meal.

Pumpkin Protein Pancakes!

 

Ingredients
2 cups Whole Wheat Flour (preferably unbleached)
2 cups non-fat Milk (or soy or rice milk)
1 cup Oatmeal
½ cup Pureed Pumpkin (from a can)
2 tbsp. ground Flax Seed
3 egg whites + 1 whole egg whisked together
1 tsp Vanilla Extract (or almond)
3 shakes Cinnamon Powder (or nutmeg or cloves or all)
1 tsp salt (optional)
Real Maple Syrup (nothing artificial) or Cottage Cheese OR Both!

Directions
-Mix all ingredients in a mixing bowl using a whisk.
-Spoon out pancake batter on a pancake griddle
-Top with Syrup (all natural), Cottage Cheese, or both

PS- Go light on the syrup 😉
