Another terrific Healthy Cooking by the very talented Chef Jerry Boucher & sous chef Becky Boucher. Our Breakfast Edition was awesome! Everything was so delicious! Breakfast really is the most important meal of the day & often we find ourselves in a rut. Chef Jerry continues to wow us with his incredible “clean” creations!
Clean Blueberry Bran Muffins
Dry ingredients:
1 1/2 cups wheat bran
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 -3 TBSP chia seeds (optional)
3 TBSP ground flax seed (optional)
Wet ingredients:
1 cup almond milk
1/2 cup unsweetened apple sauce
1 egg
1/2 cup honey
1/2 tsp vanilla extract
Lots of blueberries and sometimes I mix in cranberries, too
Preheat oven to 350 degrees. Spray muffin tins with coconut oil spray.
Mix dry ingredients together. Mix wet ingredients together. Combine together and stir until mixed. Then add berries. Spoon into muffin tins and bake for 15-20 minutes, or until tops spring back when lightly tapped.
Makes 12 muffins
Bircher Muesli
1 Cup Oats
1 Honey Crisp or Gala Apple, Grated
½ Cup Good Apple Juice
½ Cup Greek Yogurt
Large pinch (2 tsp or more) Organic Cinnamon
Mix everything together and let it sit in pot for several hours or overnight.
Add any fruit or nuts: blueberries, strawberries, grapes, pumpkin seeds, walnuts,
Avocado Baked Eggs
Preheat oven to 425 degrees F (220 degrees C).
Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.
Note: You may have to carve out a little bit of the avocado meat so the egg can completely fit.
Bake in the preheated oven until entire egg is cooked through, about 15 minutes. Lightly sprinkle each avocado with cheese of choice.
