Healthy Tofu Fried Rice Recipe!

In our last Blog, I touched on the importance of planning out your meals for the week. I know how hectic dinner time can be. Often we are exhausted from the day and simply want something fast to eat. I want to share with you one of my favorite quick & tasty family friendly dinner options:

Tofu Fried Rice!
1 tbsp olive oil
1 pack firm tofu, cut into small ½ pieces
(Or you can get pre-cubed firm tofu)
Cooking Spray
2 eggs scrambled
2 cups frozen mixed vegetables, thawed
(You can add mushrooms too)
2 cups brown rice, cooked
3 tbsp low-sodium soy sauce
(Braggs Liquid Amino Acids is my favorite!)
1 cup scallions, sliced

1. Heat olive oil in wok or frying pan over medium-high heat. Add tofu and cook, stirring occasionally, until browned, about 10 minutes. Remove to plate.

2. Spray pan with cooking spray. Add eggs and cook until scrambled. Remove to plate with tofu.

3. Spray pan again and add peas and carrots, cooking until warmed and slightly browned, 5 minutes. Add rice and soy sauce. Let cook for 5 minutes, add rice and soy sauce (Braggs). Let cook for 5 minutes, adding scallions and enjoy!

*This meal loaded with fiber, iron and protein!

*I like to make extra of most dishes to have as a quick ready-made lunch for the next day!
