Check out this GUILT-FREE side dish for dinner OR breakfast.

For an EASY Gourmet Breakfast that is sure to empress the family. Top these “Squash Browns” with a little of your favorite (“Cleaning”) tomato sauce, an egg (or 2 prepared egg whites) & sprinkle with a little cheese. Also, if you like ketchup on your potato hash browns, try these with a bit of fresh salsa.

Ingredients:

YES, I know! These look SINFUL, don't they?!

  • 1 Tablespoon extra virgin olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 3 cups cooked spaghetti squash
  • 1 egg beaten
  • Dash of salt or salt alternative & black pepper, to taste

Preparation:

  1. Add oil to a large, non-stick skillet and heat to medium-high heat.
  2. Sauté the onions for a few minutes, until they begin to turn translucent.
  3. Mix the garlic, beaten egg & spaghetti squash and season to taste.
  4. Add mixture to the pan.
  5. Cook(flip in sections) until the squash starts to crisp up and turn golden brown. Serve hot.

Makes approximately six squash browns
