½ lb lean ground turkey
4 oz (dry) whole wheat elbow macaroni
2 medium fresh tomatoes diced
1 8-oz can tomato sauce (try to find no salt added or low sodium)
1 tsp Italian seasoning
¼ cup shredded part-skim mozzarella cheese
1. Preheat oven to 350 F. Spray a large skillet with nonstick spray, then place over medium heat. Add turkey and brown, breaking up with spatula until cooked through.
2. Meanwhile, boil water in a medium saucepan. Add pasts and cook until al dente.
3. Combine turkey pasta and remaining ingredients in an oven safe dish. Stir well, then bake for 15 minutes or until mixture is bubbling and cheese has melted.
